I Wonder How Dr. Seuss Would Feel About My Green Pudding and Cinnamon…

Are you ready for this friends? I warn you now, this recipe is not for the faint of heart. It’s pudding again, healthy, vita-tastic, GREEN pudding.

It begins as all of my latest recipes has, with 1/4 cup rolled oats and a food processor.

You know what to do.

The next step is still familiar, add 1 tsp unsweetened cocoa powder. Cool.

It’s step there where things get a little crazy…cue: SPIRULINA, “nature’s multi-vitamin!”

Add in 1/2 tsp Spirulina (serving size is 1 tsp but remember this is pudding, not a green shake).

Now that I’ve unveiled the green-causing craziness, here are the rest of the recipe’s steps in normally listed order, without all the dramatic jibber jabber 😉

1/2 cup nonfat greek yogurt or coyo,

1/2 cup unsweetened almond milk,

Mix oat powder, cocoa powder and spirulina into the bowl of yogurt and almond milk,

Add 1 tsp local honey (optional)

Add 1 Tbsp Ground Chia Seeds,

Add 2 chopped Deglet Noor dates,

Add 2 heaping Tbsp creamy almond butter (I’m an almond butter fiend so omit the “heaping” part if you aren’t into it…),

stir very, very well.
Garnish with a sprinkle of superfood cinnamon and your power-packed Green Pudding is finished.

Your body will be radiating nutrients for hours to come, enjoy 🙂
